Into the Brew Pot

A brewing journal and some recipes. Most of these recipes use extract with steeped grains, but a couple are mini-mash recipes that mash a few pounds of grains. Unless stated otherwise, I boil bittering hops for an hour, flavoring hops for 15 minutes, and aroma hops for a minute or less. I use whole-flower hops, unless otherwise stated. I always use either 1 oz. of Irish moss, or a Whirfloc tablet as a clarifying agent, added during the last 15 minutes of the boil.

Thorfinn's Scotch Ale 2007

I bottled 7-22 oz bottles of this using Cooper fermentation drops. It worked great. This beer tasted amazing after a year in the bottle. The dark fruit flavors really came out with aging, and the alcohol bite mellowed considerably.

Grain bill
(mash for 1 hour at 155°F)
8 oz Caravienne
8 oz Belgian Aromatic
8 oz Special B
3 oz Black Roasted Barley
8 oz Crystal 80
3 oz Peated Malt

Extract/fermentables
6 lb Gold LME (N. Brewer)
5 lb Dark LME

Hop schedule
Bittering 1.0 oz Marynka pellets (6.5% AA)

1.0 oz Progress pellets (6.0% AA)

0.25% Galena pellets (6.0% AA)

Danstar Nottingham Ale yeast - 2 pkgs
